Kale comes in many varieties. Pictured above is red kale, my personal favorite. I grow several varieties each year, Russian Red, Blue Dwarf, Curly, and Lacinato. I haven't tried the Dinosaur variety yet.

Kale is a power house food. I prefer to eat it raw, but if you slightly steam it or stir fry it the nutritional value is not compromised. Boiling it however will weaken the nutritional value. Kale is high in anti-oxidants, vitamins A, K, C, Calcium, and iron. It has powerful anti-inflammatory and detox benefits also. High in fiber and tastes great on sandwiches.
